Roasted Pumpkin Seeds π

Keen to carve the pumpkin, but no idea what to do with all the pumpkin seeds? Well hereβs the solution - roasted pumpkin seeds are easy and quick way to make a great snack.
Recipe tip: This recipe can be modified to your taste. Simply swap the seasoning for different spices, such as cumin, ground coriander, cinnamon, nutmeg, chili or cardamom and many more.
What youβll need:
Pumpkin seeds, scooped from fresh pumpkin
Olive oil to drizzle
Sweet paprika powder
Garlic powder
How to do it:
Scoop out the seeds from the pumpkin. Wash them and make sure to remove all the stringy pumpkin flesh. Pat dry with kitchen towel.
Set the oven to 180C.
Mix the seeds with the seasoning and a drizzle of olive oil.
In the hot oven, roast the seeds on the baking tray for 10 minutes or until golden.
Sprinkle on soups, salads, garnish or as a simple crunchy snack.
Store the seeds in the fridge where they will last for up to two months.
