Sweet Potato, Potato and Broccoli Soup

This soup will please even the pickiest palates 😊 The natural sweetness of the sweet potato, together with the creamy potato and the broccoli, creates a velvety and irresistible soup! This recipe is very easy to make and uses simply our organic vegetable bouillon as seasoning.

Recipe tip: We used sweet potatoes in this recipe, but carrots or butternut squash will work very well too. When making soup, the trick is to use different coloured vegetables. This will provide a variety of vitamins, minerals and fibre. Chopping the vegetables in small sizes will reduce the cooking time.

 

What you’ll need:

  • 1 small onion, chopped

  • 1 clove garlic, chopped

  • 35ml olive oil

  • 1 medium potato, approx. 120g, peeled and chopped in small cubes

  • 2 medium sweet potatoes, approx. 180g, peeled and chopped in small cubes

  • A handful of broccoli florets, approx. 100g, chopped in small bits#

  • 500 ml hot water

  • 2 tsp Marigold Organic Vegetable Bouillon

  • 1 tbsp of your favourite Marigold Nutritional Yeast Flakes to serve

How to do it:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook gently for 5 minutes until softened. Add the garlic and cook for a further 2 minutes.

  2. Stir in the potato chopped in small cubes, the sweet potatoes and broccolis. Sautée for 5 minutes. Pour in the hot water and the vegetable bouillon stock, bring to the boil, then reduce to a simmer. Cover and cook for 15 minutes until the vegetables are tender.

  3. Once cooked, blend until smooth. Add more bouillon powder to adjust the flavour, if needed.

  4. Enjoy sprinkled with our Nutritional Yeast for additional vitamins and fibre 😊
