This stir fry blends savoury tofu with the sweetness of mango and looks like rainbow on the plate! 🌈

Recipe tip: Marigold Tofu is very easy to cook with, just drain the can and break tofu into pieces. No pressing or waiting needed!

 

What you’ll need:

  • 1 can of Marigold Tofu

  • 4 large stalks of spring onion, chopped

  • 1 red pepper, diced

  • 2 carrots, grated

  • 1 mango, diced

  • 2 tbsp oil

  • 2 cloves of garlic, minced

  • 1tsp ginger, minced

  • 2 tbsp of sweet chili sauce

How to do it:

  1. Heat the oil in the pan. Fry garlic, ginger, carrot, pepper and spring onion.

  2. Add tofu and stir well. Fry until golden.

  3. Add mango. Stir well and allow mango to soften.

  4. Add sweet chili sauce and stir well.

  5. Serve with rice or naan.
