Tofu Tacos

Our ready to eat braised tofu stands out from the crowd as a textured meat alternative. It is perfect for this vegan Mexican style dish and will convert even the most avid meat eaters!
Recipe tip: We’ve used ready-made tacos but you can make your own if you’re feeling adventurous.
What you’ll need:
- 1 x 225g tin of Marigold Braised Tofu 
- 1 large red onion, finely chopped 
- 1 large garlic clove, crushed 
- 1 red pepper, deseeded and roughly chopped 
- 175g sweetcorn 
- 3 medium tomatoes, chopped 
- 1 tbsp tomato paste 
- 1 tsp chilli powder 
- 1 tsp cumin powder 
- 1 tsp of Marigold Bouillon Powder 
- 1 tsp smoked paprika 
- Fresh coriander, chopped, to serve 
- A pack of ready-made taco shells 
- 1 lime (optional) 
- Cooked long grain rice 
How to do it:
- Heat a spoonful of oil in a shallow pan. Gently sauté the onion, garlic and red pepper for 5 minutes. 
- Add the sweetcorn, tomatoes, tomato paste and all the seasoning ingredients, then stir in and simmer for 5 minutes. 
- Drain the tofu and pull apart with your hands. Add it to the sauce mix and stir well until heated through 
- Add the cooked rice until warm. 
- Serve the mix in the taco shells with a good sprinkling of fresh coriander, and you can add a squeeze of lime juice if you like.
