Sweet Potato Mash

Easy peasy, heart warming and just like a big hug in a bowl. Make this for yourself for a quick lunch or a super charged side dish.
Recipe tip: Sweet potatoes are incredibly high in vitamin A, so they are worth to be included in a weekly meal plan.
What you’ll need:
- 2 medium sweet potatoes 
- A big glug of olive oil 
- Few spoons of Engevita 
How to do it:
- Simply peel two medium sweet potatoes. Boil until soft (about 10 minutes). 
- Mash with olive oil and a big spoon of our nooch. 
- Season to taste and serve. 
- Sprinkle more nooch on top if you fancy, but you’ll love the flavour either way.
