Crispy Mo-Du Potato Salad

What you’ll need:
For the dressing:
- Hoisin sauce 
- Vegan mayo 
- Sesame seeds 
- Fresh coriander 
- Pickle juice 
For the salad:
- 500g potatoes 
- Cucumber 
- Crispy onions 
- Spring onions 
How to do it:
- Roast the potatoes with a splash of olive oil and a bit of salt. 
- Break up Mo-Du and fry the pieces until crispy. 
- Mixed the dressing ingredients until smooth. 
- Add roasted potatoes to the dressing, alongside Mo-Du, chopped cucumber and spring onions. 
- Sprinkle with sesame seeds and crispy onion.
