Crispy Mo-Du Potato Salad

What you’ll need:
For the dressing:
Hoisin sauce
Vegan mayo
Sesame seeds
Fresh coriander
Pickle juice
For the salad:
500g potatoes
Cucumber
Crispy onions
Spring onions
How to do it:
Roast the potatoes with a splash of olive oil and a bit of salt.
Break up Mo-Du and fry the pieces until crispy.
Mixed the dressing ingredients until smooth.
Add roasetd potatoes to the dressing, alognside Mo-Du, chopped cucumebr and spring onions.
Sprinkle with sesame seeds and crispy onion.
