What you’ll need:

For the dressing:

  • Hoisin sauce

  • Vegan mayo

  • Sesame seeds

  • Fresh coriander

  • Pickle juice

For the salad:

How to do it:

  1. Roast the potatoes with a splash of olive oil and a bit of salt.

  2. Break up Mo-Du and fry the pieces until crispy.

  3. Mixed the dressing ingredients until smooth.

  4. Add roasetd potatoes to the dressing, alognside Mo-Du, chopped cucumebr and spring onions.

  5. Sprinkle with sesame seeds and crispy onion.
