“Duck” & Orange Salad

What you’ll need:
For the salad:
100g watercress
1 head of red chicory
1 can mock duck
2 oranges
59g pomegranate seeds
50g walnuts
For the dressing:
2 tbsp olive oil
1 piece of ginger
Juice of 1 lime
1 tbsp maple syrup
Salt and pepper
How to do it:
Make the dressing: Peel and finely grate the ginger. In a small bowl or jar, whisk together the grated ginger, lime juice, olive oil, maple syrup, and a pinch of salt and pepper. Set aside to let the flavours meld.
Prep the oranges: Peel and slice the oranges into rounds or segments, removing any seeds.
Assemble the salad: Drain the mock duck and gently shred or break it into bite-sized pieces. On a serving platter, layer the watercress and torn red chicory leaves. Add the mock duck, orange slices, pomegranate seeds, and walnuts.
Dress and serve: Drizzle the ginger-lime dressing over the top just before serving. Finish with a little black pepper if desired.
