“Duck” & Orange Salad

What you’ll need:
For the salad:
- 100g watercress 
- 1 head of red chicory 
- 1 can mock duck 
- 2 oranges 
- 59g pomegranate seeds 
- 50g walnuts 
For the dressing:
- 2 tbsp olive oil 
- 1 piece of ginger 
- Juice of 1 lime 
- 1 tbsp maple syrup 
- Salt and pepper 
How to do it:
- Make the dressing: Peel and finely grate the ginger. In a small bowl or jar, whisk together the grated ginger, lime juice, olive oil, maple syrup, and a pinch of salt and pepper. Set aside to let the flavours meld. 
- Prep the oranges: Peel and slice the oranges into rounds or segments, removing any seeds. 
- Assemble the salad: Drain the mock duck and gently shred or break it into bite-sized pieces. On a serving platter, layer the watercress and torn red chicory leaves. Add the mock duck, orange slices, pomegranate seeds, and walnuts. 
- Dress and serve: Drizzle the ginger-lime dressing over the top just before serving. Finish with a little black pepper if desired.
