Mediterranean Tunah Salad
Serves: 2 to 4 either as a main or a side dish

A simple and delicious recipe which is also nutritious too – a great source of protein with our Tunah and the cannellini beans.
Recipe tip: Cannellini beans paired with Marigold Tunah offer an easy way to boost daily fibre intake.
What you’ll need:
1 can of our meat free Tunah broken up on a plate
Chopped cherry tomatoes (about 10)
¼ of a large cucumber chopped
4 chopped spring onions
Half a red and half a green pepper chopped
Chopped handful of pitted black olives
½ a can of cannellini beans drained
A handful of parsley and mint finely chopped
For the dressing – 3 good glugs of olive oil, half a lemon squeezed, 2 tsp sumac and a drizzle of balsamic vinegar – all mixed together
How to do it:
Spread the tunah on a plate, add all the other ingredients and stir, then toss in the dressing. Super easy!
This salad is also the perfect topping for jacket potatoes.
