Mediterranean Tunah Salad

A simple and delicious recipe which is also nutritious too – a great source of protein with our Tunah and the cannellini beans.‍ ‍

Recipe tip: Cannellini beans paired with Marigold Tunah offer an easy way to boost daily fibre intake.

 

What you’ll need:

  • 1 can of our meat free Tunah broken up on a plate

  • Chopped cherry tomatoes (about 10)

  • ¼ of a large cucumber chopped

  • 4 chopped spring onions

  • Half a red and half a green pepper chopped

  • Chopped handful of pitted black olives

  • ½ a can of cannellini beans drained

  • A handful of parsley and mint finely chopped

  • For the dressing – 3 good glugs of olive oil, half a lemon squeezed, 2 tsp sumac and a drizzle of balsamic vinegar – all mixed together

How to do it:

  1. Spread the tunah on a plate, add all the other ingredients and stir, then toss in the dressing. Super easy!

  2. This salad is also the perfect topping for jacket potatoes.
