Creamy Celery Soup

Such a quick and easy Spring seasonal soup. Light and creamy with lots of flavour from our vegetable bouillon.

Creamy Celery Soup
What you’ll need:
1 tbsp olive oil
3 spring onions, chopped
2 cloves garlic, crushed
1 large potato, peeled and diced (for creaminess)
1 bunch celery (about 6–8 sticks), chopped
1 litre hot bouillon
Splash of plant milk
How to do it:
Heat oil in a heavy based pan, add onions, celery and potato, and cook gently for 5–7 minutes until soft. Add garlic and cook another minute.
Boil a kettle and stir in 1 dessert spoon of our bouillon to 1 litre of water. Stir well until dissolved.
Simmer gently for about 20 to 25 minutes until the potato and celery are soft.
Add a splash of cream or plant milk and cook for a further 5 minutes.
Blend until smooth (or leave slightly chunky if you prefer texture).
Garnish with chopped fresh celery leaves, fresh herbs or croutons.
Optional ideas
Blend slightly less for a more textured soup
Optional garnish: parsley, celery leaves, or croutons
Top with toasted seeds added crunch
