Creamy Celery Soup

Such a quick and easy Spring seasonal soup. Light and creamy with lots of flavour from our vegetable bouillon.

Creamy Celery Soup

 

What you’ll need:

  • 1 tbsp olive oil

  • 3 spring onions, chopped

  • 2 cloves garlic, crushed

  • 1 large potato, peeled and diced (for creaminess)

  • 1 bunch celery (about 6–8 sticks), chopped

  • 1 litre hot bouillon

  • Splash of plant milk

How to do it:

  1. Heat oil in a heavy based pan, add onions, celery and potato, and cook gently for 5–7 minutes until soft. Add garlic and cook another minute.

  2. Boil a kettle and stir in 1 dessert spoon of our bouillon to 1 litre of water. Stir well until dissolved.

  3. Simmer gently for about 20 to 25 minutes until the potato and celery are soft.

  4. Add a splash of cream or plant milk and cook for a further 5 minutes.

  5. Blend until smooth (or leave slightly chunky if you prefer texture).

  6. Garnish with chopped fresh celery leaves, fresh herbs or croutons.


Optional ideas

  • Blend slightly less for a more textured soup

  • Optional garnish: parsley, celery leaves, or croutons

  • Top with toasted seeds added crunch
