Asparagus Sandwiches with Nooch Mayonnaise

If you love asparagus season like we do, then this sandwich is for you. If you have any cooked asparagus leftovers, keep them for lunch the next day and make this quick, delicious alternative mayonnaise.
Recipe tip: For even more flavour, try adding sliced tomatoes along with chopped fresh herbs like dill, parsley, or chives to the sandwich.
What you’ll need:
Leftover asparagus (6–8 spears, cooked and cooled)
2 tbsp of plant-based yogurt (or any other favourite)
1 tsp of Dijon mustard
1 tbsp of Nutritional Yeast (Nooch)
A pinch of lemon zest
Salt and pepper to taste
Two slices of your favourite bread
How to do it:
Make the amount you need by mixing about 2 tablespoons of plant-based yogurt with a teaspoon of Dijon mustard, a tablespoon of nutritional yeast, a sprinkling of black pepper and a few shavings of lemon zest. Stir them all together well.
Spread onto one side each of two slices of bread.
Put your asparagus in between.
Gently squash together and enjoy.
