Loaded Mediterranean Tofu Wraps

This is so quick and easy and we guarantee you’ll just love the flavour. Our tofu works so well as the meat alternative.
Recipe tip: You can use other veg strips or add olives for a bit of extra pzazz.
What you’ll need:
- 1 x 225g tin of our braised vegan tofu (drained and sliced into strips) 
- For the coating: 1 tbsp dukkha, 2 tsp oregano, 2 tsp cumin powder, 1 level tbsp plain flour (can be gluten free), 1 tbsp olive oil 
- Per wrap: 1 tortilla wrap, a spreading of sundried tomato paste, shredded lettuce, thinly sliced red onion, strips of yellow pepper, slices of tomato 
How to do it:
- Mix all the coating ingredients gently with the tofu using your hands. 
- Saute in a pan on a medium high heat until the are browned and cooked through. 
- Lay out your tortillas. To each one spread about 2 tsp of sundried tomato paste on top then scatter all the other wrap ingredients. Top with the cooked tofu. 
- Roll each wrap and slice in two for a really delicious and flavourful Mediterranean lunch or snack.
