Gazpacho Soup

This gorgeous, timeless summer cold soup uses our famous Marigold Original Bouillon. It’s totally delish and perfect for summer evening suppers. 
Recipe tip: Serve with freshly baked garlic bread for maximum effect. This is also delicious garnished with some freshly chopped mint leaves.
What you’ll need:
- 6 ripe tomatoes, chopped 
- 1 cucumber, peeled and chopped 
- 1 red pepper, chopped 
- 1 small red onion, chopped 
- 2 garlic cloves 
- 250ml tomato juice 
- 2 tbsp olive oil 
- 1 tbsp red wine vinegar 
How to do it:
- Simply blend all the ingredients until smooth (you many need to add some extra water) 
- Chill (the soup that is) for at least 2 hours before serving
